Roasted Cauliflower with Za'atar and Brown Butter Pistachios
Cauliflower roasted with za'atar and cinnamon, finished with nutty brown butter and toasted pistachios.
Cauliflower roasted with za’atar and a little cinnamon until browned and tender, then spooned with nutty brown butter and pistachios.

Ingredients
- 1 head cauliflower
- 2 tablespoons olive oil
- 1 teaspoon za’atar
- ¼ teaspoon cinnamon
- Salt
- Black pepper
- 3 tablespoons butter
- ¼-⅓ cup pistachios, chopped
- Optional: honey, for drizzling
Method
Preheat oven to 425°F.
Cut the cauliflower into florets and put them on a sheet pan.
Add 2 tablespoons olive oil, 1 teaspoon za’atar, ¼ teaspoon cinnamon, salt, and pepper. Toss well.
Roast for 15 minutes, then flip.
Return to the oven for 10-15 minutes, until browned and tender.
Make the Brown Butter
Put a small pot over medium heat.
Add 3 tablespoons butter. Let it melt, foam, then turn golden and smell nutty.
Add the chopped pistachios for 30 seconds, then turn off the heat.
Spoon the brown butter and pistachios over the cauliflower.
Optional: add a tiny drizzle of honey. Finish with a pinch of salt.
