Watermelon, Feta, Mint, and Finger Lime Salad

Cool watermelon with feta, torn mint, and popping finger lime, dressed simply with olive oil and lemon.

Serves 2 | Time ~15 min

Cool cubed watermelon with feta and torn mint, dressed at the last minute with olive oil, lemon, and bursts of finger lime.

Ingredients

  • 4 cups watermelon, cut into cubes
  • 4 ounces feta, crumbled
  • Torn mint leaves
  • 1 tablespoon olive oil
  • Juice of ½ lemon
  • Black pepper
  • 1 finger lime

Method

In a bowl, combine the watermelon, feta, and torn mint. Cover and refrigerate.

Do not add lemon, oil, or finger lime yet.

Right before serving, add 1 tablespoon olive oil, the juice of ½ lemon, and black pepper. Gently toss.

Cut the finger lime and squeeze the pearls over the salad.
