Cucumber, Radish, Avocado, and Dill Salad

Crisp cucumber and radish with creamy avocado and a bright lemon-honey dressing. Dress right before serving.

Ingredients

Salad

  • 2 large cucumbers, or 4 Persian cucumbers
  • 8–10 radishes
  • 2 avocados
  • ½ cup fresh dill, roughly chopped
  • Optional: 2 tablespoons chives or mint

Dressing

  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • 1 teaspoon honey
  • ¾ teaspoon kosher salt
  • Black pepper

Method

Slice cucumbers into thin rounds or half-moons.

Thinly slice radishes.

Roughly chop dill.

Make the dressing in a small bowl:

  • juice of 1 lemon
  • 3 tablespoons olive oil
  • 1 teaspoon honey
  • ¾ teaspoon kosher salt
  • black pepper

Taste the dressing and adjust:

  • More lemon if flat
  • More salt if bland
  • More olive oil or a tiny bit more honey if too sharp

Right before serving, slice or cube the avocados.

Gently toss cucumbers, radishes, avocado, dill, and dressing.

Serve immediately so the avocado stays fresh and the cucumbers stay crisp.
